Ingredients
  

For the Dough
  • 3 cups All-Purpose Flour Can be substituted with bread flour for chewiness.
  • 1 cup Bread Flour Adds higher protein for a better crumb.
  • 2 tsps Active Yeast Instant yeast is a good alternative.
  • 1/4 cup Sugar Can be substituted with honey or maple syrup.
  • 1 tsp Salt Controls yeast activity.
  • 1 cup Milk Whole milk is ideal, but almond milk works too.
  • 1 large Egg A flax egg is a great vegan alternative.
  • 1/2 cup Butter (for dough) Unsalted is best for seasoning control.
  • 1/4 cup Butter (for filling) Same as above for substitutes.
For the Filling
  • 2 tbls Zest of Oranges Lemon zest can be used if oranges are unavailable.
  • 2 tbls Tea Leaves from Earl Grey Bags Consider lavender for a floral twist.
For the Glaze
  • 1 large Egg (for brushing) Omit for vegan or use a plant-based egg wash.

Method
 

Dough Preparation
  1. In a large bowl, mix together all-purpose flour, bread flour, sugar, salt, warm milk, yeast, and egg until it becomes a sticky, smooth dough.
  2. Cover the bowl with plastic wrap and let the dough rest in the refrigerator for 1 hour.
  3. While the dough chills, take your butter and shape it into a flat rectangular envelope. Chill this in the fridge for about 30 minutes.
  4. Roll the chilled dough into a large rectangle, place the butter envelope in the center, and fold the dough around it, sealing the edges tightly.
  5. Repeat the rolling and folding process 2-3 times, refrigerating for 30 minutes between each fold.
  6. Aim for an overnight chill after the final fold for the best results!
Filling and Assembly
  1. In a bowl, melt some additional butter, then mix in sugar, orange zest, and Earl Grey tea leaves to create a richly flavored filling.
  2. Roll out the laminated dough one last time, spread the filling evenly over it, and roll it tightly into a log.
  3. Cut the log into sections and place them in a buttered muffin tin. Let them rise for 1-2 hours until puffy.
Baking
  1. Preheat your oven to 400°F. Brush the tops of the buns with egg wash before baking for 30-40 minutes until golden brown.
  2. Once baked, cool them on a wire rack.
  3. While still warm, roll the buns in a reserved sugar mix for an extra sweet touch.
