Preparation
- Thaw the puff pastry at room temperature for 30-45 minutes. Preheat your oven to 400°F (204°C) and line baking sheets with parchment paper.
- Mix the sliced strawberries, sugar, and cornstarch in a bowl. Allow to sit for 15 minutes.
- Blend the cream cheese until smooth, then add powdered sugar and vanilla extract.
- Unfold one sheet of puff pastry and cut it into six rectangles.
- Score a border about ¼ inch from the edges of each rectangle.
- Spoon 1 tablespoon of cream cheese filling into each rectangle, layer strawberries, brush edges with beaten egg, and sprinkle with sugar.
- Chill danishes in the fridge for 15-20 minutes.
- Bake for 20-25 minutes or until golden brown.
- Cool on a baking sheet for 5 minutes, then transfer to a cooling rack.
- Top each Danish with warm strawberry jam, powdered sugar, or drizzle with icing.
