Method
 

Preparation
  1. Thaw the puff pastry at room temperature for 30-45 minutes. Preheat your oven to 400°F (204°C) and line baking sheets with parchment paper.
  2. Mix the sliced strawberries, sugar, and cornstarch in a bowl. Allow to sit for 15 minutes.
  3. Blend the cream cheese until smooth, then add powdered sugar and vanilla extract.
  4. Unfold one sheet of puff pastry and cut it into six rectangles.
  5. Score a border about ¼ inch from the edges of each rectangle.
  6. Spoon 1 tablespoon of cream cheese filling into each rectangle, layer strawberries, brush edges with beaten egg, and sprinkle with sugar.
  7. Chill danishes in the fridge for 15-20 minutes.
  8. Bake for 20-25 minutes or until golden brown.
  9. Cool on a baking sheet for 5 minutes, then transfer to a cooling rack.
  10. Top each Danish with warm strawberry jam, powdered sugar, or drizzle with icing.
