Preparation
- Prepare the Black Cherry Filling: In a medium saucepan, combine black cherries, sugar, and lemon juice. Cook over medium heat until thickened, approximately 10-15 minutes. Allow to cool.
- Make the Cheesecake Mixture: Beat the cream cheese and sugar until smooth, then fold in cooled cherry mixture.
- Roll Out the Dough: Roll pie crust to about 1/8 inch thickness and cut out circles.
- Assemble Hand Pies: Place filling in center of each dough circle, fold over and crimp edges.
- Apply Egg Wash: Preheat oven to 375°F (190°C) and brush tops with egg or milk.
- Bake: Transfer to a lined tray and bake for 20-25 minutes or until golden brown.
- Cool and Serve: Allow to cool slightly before serving. Enjoy warm!
