Ingredients
  

Filling
  • 2 cups Black Cherries fresh or frozen
  • 8 oz Cream Cheese can substitute with ricotta
  • 1/2 cup Sugar adjust to taste
  • 2 tbsp Lemon Juice fresh lemon juice preferred
Crust
  • 1 package Pie Crust store-bought or homemade
  • 1 large Egg for egg wash; can substitute with milk

Method
 

Preparation
  1. Prepare the Black Cherry Filling: In a medium saucepan, combine black cherries, sugar, and lemon juice. Cook over medium heat until thickened, approximately 10-15 minutes. Allow to cool.
  2. Make the Cheesecake Mixture: Beat the cream cheese and sugar until smooth, then fold in cooled cherry mixture.
  3. Roll Out the Dough: Roll pie crust to about 1/8 inch thickness and cut out circles.
  4. Assemble Hand Pies: Place filling in center of each dough circle, fold over and crimp edges.
  5. Apply Egg Wash: Preheat oven to 375°F (190°C) and brush tops with egg or milk.
  6. Bake: Transfer to a lined tray and bake for 20-25 minutes or until golden brown.
  7. Cool and Serve: Allow to cool slightly before serving. Enjoy warm!
