Preparation
  1. Marinate the chicken: In a ziplock bag, combine chicken with dill pickle juice and refrigerate for 8 to 12 hours.
  2. Dry the chicken: Pat it dry with paper towels and discard leftover juice.
  3. Preheat the oven: Set to 425°F and prepare baking sheet with parchment paper.
  4. Whisk the egg mixture: Mix beaten eggs and milk in a medium bowl.
  5. Combine the breadcrumbs: Mix seasoned breadcrumbs, panko, salt, and pepper in a large shallow bowl.
  6. Dip the chicken: Coat each piece in the egg mixture and then in the breadcrumb mixture.
  7. Arrange on the baking sheet: Place coated chicken on sheet and spray with olive oil if desired.
  8. Bake to perfection: Bake for 10 minutes, flip, and bake another 8 minutes until golden brown.
