For the Bottom Layer
  • 1 cup Rice Flour Can substitute with all-purpose flour
  • 1/4 cup Tapioca Flour Essential for texture
  • 1/2 cup Pandan Juice Substitute with diluted pandan extract if necessary
  • 3/4 cup Palm Sugar/Brown Sugar Coconut sugar can also be used
  • 1/4 teaspoon Salt Sea salt works great
For the Coconut Cream Topping
  • 1 cup Coconut Cream Coconut milk can substitute
  • 2 tablespoons Additional Rice Flour Essential for thickness
  • 1/4 teaspoon Salt Ensures sweet and salty balance

Method
 

Preparation Steps
  1. Lightly grease 12 small ceramic cups or mini muffin pans with oil to prevent sticking.
  2. In a bowl, whisk together the rice flour, tapioca flour, pandan juice, palm sugar, and salt until smooth.
  3. Pour the mixture into prepared cups, filling each halfway. Steam over medium heat for 5-6 minutes until set.
  4. Whisk together the coconut cream, additional rice flour, and salt until smooth.
  5. Pour the coconut cream mixture over the bottom layer in the cups. Steam for an additional 5-7 minutes until set.
  6. Remove from steamer and let cool slightly before serving.
