Cooking Instructions
- Rinse the octopus thoroughly in a large bowl of water.
- Boil a large pot of water and dunk the octopus in and out of the water three times.
- Add the white vinegar to the boiling water and return to a boil. Simmer the octopus covered for about 50-60 minutes.
- Cool the octopus in the pot for several hours without draining the water.
- Remove the octopus from the pot, cutting off the skin from each tentacle.
- Combine the octopus pieces with olive oil, lemon juice, chopped garlic, parsley, and salt.
- Seal the container and refrigerate for a few hours before serving.
