Ingredients
  

Dough
  • 170 g Whole milk warmed to 110 degrees F
  • 30 g Granulated sugar for sweetness and browning
  • 11 g Instant or active dry yeast essential for fluffy rolls
  • 3 Eggs room temperature
  • 1 tsp Vanilla paste or extract enhances sweetness
  • 450 g All-purpose flour foundation for soft dough
  • 1 zest Orange zest adds citrusy flavor
  • ½ tsp Kosher salt balances sweetness
  • 127 g Unsalted butter softened
Jam Filling
  • 12 oz Fresh or frozen cranberries provides tartness
  • 50 g Granulated sugar to sweeten tart cranberries
  • 1 zest Orange zest infuses citrus flavor
  • 15 g Fresh orange juice adds moisture
  • 1 tsp Cinnamon for warm flavor
  • ¼ tsp Kosher salt enhances taste
Icing
  • 56 g Cream cheese room temperature
  • 56 g Unsalted butter melted
  • 113 g Powdered sugar for sweet icing
  • Orange zest for topping

Method
 

Making the Rolls
  1. Warm the milk to 110 degrees F and stir in the yeast and sugar.
  2. Blend eggs and vanilla into the milk-yeast mixture.
  3. In a stand mixer bowl, mix together flour and salt.
  4. Pour the milk mixture into the flour mix and mix on low-medium speed for 3 minutes.
  5. Gradually add the butter until fully blended.
  6. Knead the dough for 8-12 minutes until stretchy.
  7. Transfer dough to a greased bowl, cover, and let rise overnight or for 1 hour.
  8. Prepare the jam filling in a medium saucepan.
  9. Cook the mixture over medium heat for 10-12 minutes.
  10. Thicken the jam for an additional 8-10 minutes.
  11. Roll out the dough into a rectangle.
  12. Spread 1 cup of chilled jam over the dough.
  13. Roll the dough tightly and seal edges.
  14. Slice into 9 rolls, each about 1 ½ inches thick.
  15. Cut rolls using unflavored dental floss.
  16. Place rolls in a baking dish, cover, and let rise for 30 minutes.
  17. Preheat your oven to 350 degrees F.
  18. Bake for 22-25 minutes until lightly golden.
  19. Prepare the icing by whisking cream cheese, melted butter, and powdered sugar.
  20. Spread icing over warm rolls and sprinkle with orange zest.
