How to Make Easy Simple Mango Pudding
- Prepare Mango: Peel, pit, and dice the ripe mangos. Blend until smooth. For extra silkiness, strain through a fine sieve.
- Bloom Gelatin: In a small bowl, combine gelatin (or agar agar) with cold water. Stir until it thickens, about 30-45 seconds.
- Mix Ingredients: Add sugar, coconut milk, and mango puree to the bloomed gelatin. Whisk thoroughly.
- Heat Mixture: Transfer the mixture to a pot. Warm over medium-low heat for 4-5 minutes, stirring continuously. Do not let it boil!
- Set Pudding: Pour the mixture into serving bowls or molds. Refrigerate for at least 6 hours or overnight.
