Preparation Steps
  1. Activate the yeast: In a bowl, mix warm water, warm milk, one tablespoon of brown sugar, and the yeast. Let it sit until bubbly, about 2 minutes.
  2. Prepare the dough: In a separate bowl, combine melted butter, the remaining sugar, egg, salt, spices, and sultanas.
  3. Combine mixtures: Pour the yeast mixture into the bowl with your dry ingredients. Knead the dough until it’s soft and elastic, about 10 minutes.
  4. Rise: Shape the dough into a ball and place it in a greased bowl. Cover it and let it rise in a warm spot until doubled, for about 30-60 minutes.
  5. Shape the buns: Divide the dough into equal pieces, shape them into balls, and place them in a greased baking dish. Allow them to rise again for 30 to 60 minutes.
  6. Pipe crosses: Mix flour and water to create a thick paste. Use it to pipe the iconic cross shape on top.
  7. Bake: Preheat your oven to 425°F (220°C). Bake the buns for 15-20 minutes until golden brown.
  8. Glaze: Once baked, brush the warm buns with a mixture of maple syrup and water.
