Making the Pretzel Bites
- Whisk together the warm milk and brown sugar in a large mixing bowl. Sprinkle the yeast on top and let it sit for about 5 minutes, until it gets foamy and fragrant.
- Mix in the flour, melted butter, and salt. Stir until combined, then knead the dough for about 4 minutes until it feels smooth and elastic. If it’s sticky, add a bit more flour.
- Transfer the dough to a lightly oiled bowl. Cover it with a damp towel and allow it to rise in a warm place for 20 to 30 minutes, until it has doubled in size and looks fluffy.
- Preheat your oven to 450°F. Line two large baking sheets with parchment paper. In a large saucepan, combine the water and baking soda, bringing them to a boil.
- Divide the dough onto a lightly oiled surface, cutting it into 12 equal pieces. Roll each piece into 3/4-inch wide ropes, then cut them into 1-inch pieces to form the bites.
- Boil the pretzel bites in batches, about a dozen at a time, for 30 seconds each. Use a slotted spoon to carefully transfer them to the prepared baking sheets after boiling.
- Brush the tops of the pretzel bites with the egg wash, then sprinkle with coarse sea salt to add a delicious crunch.
- Bake in your preheated oven until they turn golden brown, which should take about 12 to 14 minutes. Once done, transfer them to a wire cooling rack.
