Method
 

Making the Pretzel Bites
  1. Whisk together the warm milk and brown sugar in a large mixing bowl. Sprinkle the yeast on top and let it sit for about 5 minutes, until it gets foamy and fragrant.
  2. Mix in the flour, melted butter, and salt. Stir until combined, then knead the dough for about 4 minutes until it feels smooth and elastic. If it’s sticky, add a bit more flour.
  3. Transfer the dough to a lightly oiled bowl. Cover it with a damp towel and allow it to rise in a warm place for 20 to 30 minutes, until it has doubled in size and looks fluffy.
  4. Preheat your oven to 450°F. Line two large baking sheets with parchment paper. In a large saucepan, combine the water and baking soda, bringing them to a boil.
  5. Divide the dough onto a lightly oiled surface, cutting it into 12 equal pieces. Roll each piece into 3/4-inch wide ropes, then cut them into 1-inch pieces to form the bites.
  6. Boil the pretzel bites in batches, about a dozen at a time, for 30 seconds each. Use a slotted spoon to carefully transfer them to the prepared baking sheets after boiling.
  7. Brush the tops of the pretzel bites with the egg wash, then sprinkle with coarse sea salt to add a delicious crunch.
  8. Bake in your preheated oven until they turn golden brown, which should take about 12 to 14 minutes. Once done, transfer them to a wire cooling rack.
  9. (Optional) Brush the baked pretzel bites with extra melted butter right after they come out for a rich, irresistible finish!
