  • 1 whole Rotisserie Chicken shredded
  • 1 package Gnocchi fresh or frozen
  • 4 cups Chicken Broth opt for low-sodium
  • 2 cups Fresh Spinach kale or Swiss chard can be used
  • 1 cup Carrots diced
  • 1 cup Celery diced
  • 1 whole Onion chopped
  • 2 cloves Garlic minced
  • 1 teaspoon Italian Seasoning consider fresh herbs
  • Salt and Pepper to taste
For Serving
  • Crusty Bread or Salad for dipping or a light side

Direction Steps
  1. In a large pot, heat a splash of olive oil over medium heat.
  2. Add chopped onions, sautéing until they become translucent, about 3-4 minutes.
  3. Stir in diced carrots and celery, cooking for 5 minutes until softened.
  4. Mix in minced garlic and sauté for another minute until fragrant.
  5. Pour in the chicken broth and bring to a gentle boil.
  6. Toss in the gnocchi and shredded rotisserie chicken; reduce heat and let it simmer for 5 minutes.
  7. Gently fold in fresh spinach and Italian seasoning, cooking until the spinach wilts, about 2-3 minutes.
  8. Season with salt and pepper to taste; serve hot!
