Ingredients
  

For the Batter
  • 2 cups Spelt Flour Substitute with gluten-free flour if needed.
  • 1 cup Rolled Oats Can replace with flour alternative.
  • 2 tsps Baking Powder Check for freshness.
  • 1 tsp Cinnamon Use apple pie spice for variety.
  • 1/2 tsp Ground Cardamom Optional, can substitute with nutmeg.
  • 1/2 tsp Sea Salt Kosher salt works as an alternative.
  • 1/4 cup Coconut Oil Substitute with vegan butter or applesauce.
  • 1/3 cup Maple Syrup Agave syrup or honey (if not strictly vegan) can be used.
  • 1 cup Non-Dairy Milk (coconut) Almond or soy milk can be used.
  • 1 tsp Vanilla Extract Can be omitted if unavailable.
For the Mix-ins
  • 1 cup Mixed Fresh Berries Frozen berries can be used directly.
  • 1 cup Baby Spinach Substitute with kale or omit if preferred.
  • 1 cup Grated Carrots Zucchini can be used, squeeze out excess moisture.
  • 1 cup Shredded Apple (Fuji) Any sweet variety can be used.
  • 1/2 cup Dried Fruits (raisins, cranberries, apricots) Replace with your favorite dried fruits.
  • 1/2 cup Seeds/Nuts (sunflower, pumpkin) Feel free to substitute with other nuts or seeds.

Method
 

Directions
  1. Prepare the Pan: Start by lining a 5 x 9 inch loaf pan with parchment paper or greasing it with non-stick spray. Preheat your oven to 375°F while you gather your ingredients.
  2. Mix Dry Ingredients: In a large mixing bowl, whisk together spelt flour, rolled oats, baking powder, cinnamon, cardamom, and sea salt.
  3. Combine Wet Ingredients: In another bowl, mix together the coconut oil, maple syrup, non-dairy milk, and vanilla extract until everything is well combined and smooth.
  4. Combine Mixtures: Gently pour the wet ingredients into the dry ingredients. Use a spatula to mix without overmixing.
  5. Add Mix-ins: Fold in your mixed berries, baby spinach, grated carrots, shredded apple, and any dried fruits or nuts you’re using.
  6. Bake the Bread: Pour the batter into the prepared loaf pan and bake for about 45 minutes, or until a toothpick comes out clean.
  7. Cool Before Slicing: Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack.
