How to Make Taiyaki
  1. In a mixing bowl, sift together cake flour, granulated sugar, baking powder, baking soda, and salt. Whisk to mix well for a perfect batter.
  2. In another bowl, beat the large egg until fluffy, then combine it with whole milk, vegetable oil, and vanilla extract.
  3. Pour the wet ingredients into the dry mixture, gently whisking until just combined. Leave a few clumps for a light texture. Cover and refrigerate for 1 hour.
  4. Warm your taiyaki pan over medium-low heat, brushing it generously with neutral oil.
  5. Pour the batter into each mold until it's about 60% full. Add 1 tablespoon of your chosen filling; cover with more batter.
  6. Close the mold, flip to distribute the batter, and cook for 2-3 minutes on each side until golden brown.
  7. Gently remove the taiyaki and let them cool slightly on a rack.
