For the Chicken Rolls
  • 4 pieces Boneless, Skinless Chicken Breasts
  • 2 tablespoons Olive Oil Can substitute with avocado oil
  • 1 medium Onion (finely chopped) Shallots can be a milder substitute
  • 2 cloves Garlic (minced) Fresh garlic is ideal
For the Filling
  • 2 cups Fresh Spinach (chopped) Kale can be used as a substitute
  • 1 cup Crumbled Feta Cheese Goat cheese can be used as an alternative
  • 1/2 cup Sun-Dried Tomatoes (chopped) Fresh tomatoes can be used
  • to taste Salt
  • to taste Pepper

Method
 

Steps
  1. Preheat your oven to 375°F (190°C).
  2. Sauté onion and garlic in a skillet with olive oil over medium heat for 3-4 minutes until translucent.
  3. Add chopped spinach to the skillet and stir until wilted, about 2-3 minutes. Remove from heat and let cool slightly.
  4. Mix the cooled spinach with crumbled feta cheese and sun-dried tomatoes in a bowl, seasoning with salt and pepper.
  5. Butterfly each chicken breast carefully, then pound to an even thickness.
  6. Fill each chicken breast with the spinach and feta mixture, roll tightly, and secure with toothpicks.
  7. Arrange stuffed chicken breasts seam side down in a greased baking dish.
  8. Bake for 25-30 minutes until internal temperature reaches 165°F (74°C).
