  • 2 tablespoons Olive oil Great for sautéing.
  • 1 medium Shallot Diced finely.
  • 2 stalks Spring onions Use only the white and light green parts.
  • 2 cloves Garlic Minced.
For the Rice
  • 1 cup Carnaroli rice Essential for Risi e Bisi.
  • 4 cups Vegetable stock Warm while cooking.
For the Finish
  • 1 cup Peas Fresh or frozen.
  • 2 tablespoons Butter For richness.
  • 1/2 cup Grana Padano Grated for serving.
  • to taste Salt Essential for seasoning.
  • to taste Black pepper Freshly ground.

Method
 

Preparation Steps
  1. Heat the olive oil in a Dutch oven or large pot over medium heat, then sauté the diced shallot for 1-2 minutes until it's soft and translucent.
  2. Add the spring onions and garlic, then cook for 1 minute, stirring gently. Stir in the Carnaroli rice and toast for 1-2 minutes.
  3. Pour in a ladle of vegetable stock, bring to a boil, then add the peas. Stir in remaining stock, reduce heat, and simmer for 10-15 minutes.
  4. Turn off the heat and stir in the butter and grated Grana Padano. Season with salt and black pepper to taste.
  5. Let it sit for 5 minutes, then serve hot, topped with extra grated Grana Padano and parsley if desired.
