  • 3 cups mashed sweet potatoes fresh or canned
  • 1/2 cup butter or margarine/dairy-free alternatives
  • 1/2 cup brown sugar can use coconut sugar for a healthier alternative
  • 2 eggs can be omitted for an egg-free version
  • 1 teaspoon vanilla extract almond extract is a substitute
For the Topping
  • 1 cup pecans or walnuts as a substitute
  • 1/3 cup flour gluten-free flour can be used
  • 1/4 cup cream almond milk or coconut cream are dairy-free options

Method
 

Preparation
  1. Preheat the Oven to 350°F (175°C).
  2. Boil or bake sweet potatoes until tender, then mash until creamy.
  3. In a bowl, mix mashed sweet potatoes with butter, brown sugar, eggs, vanilla and a pinch of salt until smooth.
  4. In another bowl, combine flour, brown sugar, melted butter, and chopped pecans until crumbly.
  5. Spread sweet potato mixture in a greased baking dish and top with pecan mixture.
  6. Bake for about 30 minutes until bubbly and golden brown.
  7. Allow to cool for a few minutes before serving.
