Cooking Instructions
  1. In a pot, mix together 4 cups of water, 1 teaspoon of salt, lemon peel, and a cinnamon stick with 1 cup of rice. Cook over medium heat for about 15 minutes until the rice absorbs the water.
  2. Gradually stir in 2 cups of room temperature milk. Keep stirring to ensure the rice cooks evenly.
  3. Once the rice starts to soften, mix in ⅔ cup of sugar. Stir over medium heat until creamy, about 20 minutes.
  4. In a separate bowl, whisk together 2 yolks, 1 teaspoon of vanilla, and 1 cup of milk. Slowly incorporate this mixture into the rice pot, stirring quickly.
  5. Pour the custard mixture into a pie dish or individual bowls and allow it to cool for approximately 4 hours until it sets.
  6. Garnish with fresh fruit or a sprinkle of cinnamon before serving.
