How to Make Delicious Peach Cherry Salsa
  1. Bring a pot of water to a boil and carefully add the peaches. Blanch them for about 30 seconds, then transfer to cold water. Peel and dice into 1/2-inch pieces.
  2. Halve and pit the cherries before chopping them into small pieces. Add them into the bowl with the diced peaches.
  3. Finely mince the garlic, chop the cilantro, and dice the red onion. Set these fragrant ingredients aside for mixing.
  4. Slice the jalapeño, remove the seeds, and chop it finely. Incorporate this spicy element into the fruit mixture.
  5. Juice the limes directly into the bowl, reserving the zest from one lime for later use.
  6. In a mixing bowl, combine the garlic, jalapeño, onions, cilantro, lime juice, and lime zest. Give it a good stir.
  7. Sprinkle in some salt to elevate the taste and gently fold the mixture to combine all the ingredients.
  8. Chill the salsa in the fridge for at least 15 minutes before serving.
