How to Make One Pan Mediterranean Shrimp Orzo Bake
  1. Preheat the oven by setting it to 425°F.
  2. Prepare the shrimp by blotting them dry and coating with olive oil, salt, garlic powder, onion powder, and the Italian herb blend.
  3. Combine the orzo and veggies in a baking pan, mixing olive oil, uncooked orzo, grated zucchini, chopped sun-dried tomatoes, Kalamata olives, minced garlic, chicken broth, Italian herb blend, onion powder, salt, and pepper.
  4. Cover the pan with parchment paper and aluminum foil, then bake for 20 minutes.
  5. Uncover and stir in chopped spinach and crumbled feta cheese.
  6. Top the orzo mixture with the seasoned shrimp and return to oven for an additional 8-10 minutes until shrimp are pink.
  7. Serve by gently stirring everything together, enjoying with fresh lemon juice and herbs.
