How to Make Linzer Cookies
  1. Soften the butter to about 65°F (18°C) for perfect texture.
  2. Preheat your oven to 350°F (175°C) and prepare baking sheets with parchment paper.
  3. In a large mixing bowl, combine the almond flour, granulated sugar, all-purpose flour, salt, and ground cinnamon.
  4. Add the softened butter and beat until it resembles sandy breadcrumbs.
  5. Incorporate the cold egg and vanilla bean paste, mixing until a smooth dough forms.
  6. Roll the dough on a floured surface to about ¼ inch thickness and cut out shapes.
  7. Transfer cutouts onto prepared baking sheets and poke centers for filling if desired.
  8. Bake for 10-12 minutes until edges turn lightly golden brown.
  9. Dust cooled cookies with powdered sugar, spread jam on half, and sandwich together.
