  • 1 cup Pitted Dates Soak in hot water for 15 minutes if too firm.
  • 1/4 cup Coconut Sugar or Monk Fruit Monk fruit is a low-calorie alternative.
  • 1/4 teaspoon Sea Salt
For Flavor
  • 1 teaspoon Vanilla Omit for a more pronounced nut taste.
  • 1/2 teaspoon Cinnamon Optional.
For the Coating
  • 1 cup Chocolate Chips Choose dark or vegan chocolate.

Method
 

Instructions
  1. In a food processor, add the pecans, soaked dates, coconut sugar, sea salt, vanilla, and cinnamon if desired. Blend until a sticky dough forms, scraping down the sides as necessary.
  2. Roll the mixture into 12 equal-sized balls and place them on a lined cookie sheet. Gently flatten each ball with your palm for a classic look.
  3. Freeze the bites for around 15 minutes to firm up for easier handling.
  4. Melt the chocolate until smooth and creamy. Dip each bite into the chocolate, coating it well, and return to the lined sheet. Place a whole pecan on top of each bite.
  5. Place the bites back in the freezer until the chocolate hardens completely. Store them in an airtight container in the freezer.
