For the Tahini-Honey Sauce
  • 1/2 cup Tahini creamy sauce base
  • 1/4 cup Honey or maple syrup for vegan
  • 2 tablespoons Lemon Juice for acidity and brightness
For Garnishing
  • 2 tablespoons Fresh Parsley chopped
  • 1 tablespoon Sesame Seeds for garnish

Preparation
  1. Preheat Oven to 425°F (220°C) to ensure the cauliflower roasts to perfection.
  2. Cut cauliflower into florets and place in a mixing bowl.
  3. Drizzle with olive oil and season with cumin, coriander, smoked paprika, salt, and black pepper. Toss to coat.
  4. Spread seasoned cauliflower on a baking sheet and roast for 20-25 minutes until golden brown and tender.
  5. In a separate bowl, whisk together tahini, honey (or maple syrup), lemon juice, and salt until smooth. Adjust consistency with water if necessary.
  6. Transfer roasted cauliflower to a serving dish and drizzle with tahini-honey sauce.
  7. Garnish with parsley and sesame seeds before serving warm.
