How to Make Mediterranean Lentil Soup
- In a large pot, warm the olive oil over medium heat.
- Add the chopped onion, carrots, and celery to the pot. Sauté for about 5 minutes until softened.
- Stir in the minced garlic and cook for an additional minute.
- Add the lentils, vegetable broth, diced tomatoes, cumin, coriander, oregano, and bay leaves. Bring to a boil.
- Reduce heat, cover, and let it simmer for 30-35 minutes.
- Add the spinach and cook for another 5 minutes.
- Taste and season with salt and pepper.
- Carefully remove the bay leaves before serving.
