How to Make Mediterranean Lentil Soup
  1. In a large pot, warm the olive oil over medium heat.
  2. Add the chopped onion, carrots, and celery to the pot. Sauté for about 5 minutes until softened.
  3. Stir in the minced garlic and cook for an additional minute.
  4. Add the lentils, vegetable broth, diced tomatoes, cumin, coriander, oregano, and bay leaves. Bring to a boil.
  5. Reduce heat, cover, and let it simmer for 30-35 minutes.
  6. Add the spinach and cook for another 5 minutes.
  7. Taste and season with salt and pepper.
  8. Carefully remove the bay leaves before serving.
