  • 1 cup Certified Gluten Free Oats
  • 1 cup Almond Milk or any plant-based/regular milk
  • 2 tablespoons Chia Seeds
  • 1 scoop Protein Powder can be swapped with plant-based protein or omitted
  • 2 tablespoons Lime Juice regular limes work as a substitute
  • 2 tablespoons Maple Syrup or Honey agave nectar is a great alternative
  • 1 teaspoon Lime Zest optional but recommended
For the Topping
  • 1 small Gluten Free Graham Wafer or crushed nuts
  • 1 cup Greek Yogurt or plant-based yogurt
  • 1/2 cup White Chocolate Chips omit/swap with dark chocolate
  • 1/4 cup Cream Cheese or dairy-free cream cheese

Method
 

Preparation
  1. In a bowl or jar, mix together the certified gluten-free oats, almond milk, chia seeds, protein powder, lime juice, maple syrup, and lime zest. Stir thoroughly to ensure everything is well combined.
  2. Cover the mixture and refrigerate it for at least 1 hour, but ideally overnight.
  3. When ready to serve, microwave white chocolate in 30-second intervals, stirring each time. Once melted, mix it with cream cheese and Greek yogurt until creamy.
  4. In a serving dish, layer the chilled oat mixture with broken gluten-free graham wafer pieces.
  5. Pour your creamy ganache generously over the layered oats, then chill in the fridge before serving.
  6. Before serving, sprinkle on additional graham crumbs or lime zest for extra flavor.
