How to Make Key Lime Pie Mini Desserts
  1. In a mixing bowl, combine graham cracker crumbs, melted butter, and white sugar until well blended. Press this mixture firmly into the bottom of your mini dessert glasses to form a solid base.
  2. In a separate bowl, beat together the reduced-fat cream cheese and low-fat vanilla Greek yogurt until smooth and creamy. In another bowl, gently mix the fat-free sweetened condensed milk and key lime juice, then fold this mixture into the cream cheese mix until fully combined.
  3. If you want to create a two-tone effect, split the filling into two bowls, adding green food coloring to one. Stir gently to achieve the desired color.
  4. Using piping bags, layer the filling into each glass, alternating between the plain and colored mixtures for a striking presentation.
  5. Place the assembled desserts in the refrigerator, allowing them to chill for at least 2 hours to set properly.
  6. Once chilled, serve your mini desserts topped with optional whipped cream, lime zest, or a sprinkle of additional graham cracker crumbs for extra flair.
