Salad Ingredients
  • 1 can chickpeas Drained and rinsed.
  • 1 can kidney beans Drained and rinsed.
  • 4 oz salami, sliced into strips Provides a savory component.
  • 4 oz deli turkey, sliced into strips Keeps dish light.
  • 8 oz mini bocconcini pearls or mozzarella Adds richness.
  • 1 cup cherry tomatoes, quartered Brings sweetness.
  • 1 medium bell pepper, diced small Adds crunch.
  • 1/2 medium red onion, sliced thin Offers a sharp bite.
  • 1/2 cup pickled sliced banana peppers, drained and chopped Brings tangy flair.

Preparation
  1. To your large mixing bowl, add all the dressing ingredients: olive oil, red wine vinegar, parmesan, mayonnaise, optional banana pepper brine, dijon mustard, minced garlic, Italian seasoning, crushed red pepper flakes, salt, and black pepper. Whisk until smooth.
  2. Add the drained and rinsed chickpeas, kidney beans, salami strips, turkey strips, bocconcini or mozzarella, cherry tomatoes, diced bell pepper, thinly sliced red onion, and pickled banana peppers into the bowl.
  3. Gently toss everything together until ingredients are evenly coated in the dressing. Taste and adjust seasonings if needed.
