- To your large mixing bowl, add all the dressing ingredients: olive oil, red wine vinegar, parmesan, mayonnaise, optional banana pepper brine, dijon mustard, minced garlic, Italian seasoning, crushed red pepper flakes, salt, and black pepper. Whisk until smooth.
- Add the drained and rinsed chickpeas, kidney beans, salami strips, turkey strips, bocconcini or mozzarella, cherry tomatoes, diced bell pepper, thinly sliced red onion, and pickled banana peppers into the bowl.
- Gently toss everything together until ingredients are evenly coated in the dressing. Taste and adjust seasonings if needed.
