For the Chicken
  • 1 whole Chicken Free-range for better flavor
  • 1 teaspoon Salt Adjust according to taste
  • 2 inches Ginger Fresh, sliced
For the Rice
  • 2 cups Jasmine Rice Can substitute with basmati
  • 4 cloves Garlic Minced
For the Garnish
  • 1 cup Cucumber Sliced
  • 0.5 cup Cilantro Fresh herbs
For the Sauce
  • 3 tablespoons Soy Sauce Adjust based on salt preference
  • 1 teaspoon Sesame Oil A little goes a long way

Method
 

Main Instructions
  1. Submerge the whole chicken in a large pot of boiling water seasoned with salt and slices of fresh ginger. Simmer for about 30 minutes until the chicken is cooked through and tender.
  2. Carefully remove the chicken and reserve the broth. In the same pot, add jasmine rice and cook it in the chicken broth, infusing it with grated ginger and minced garlic for extra flavor. Let it simmer for approximately 15 minutes or until the rice is fluffy.
  3. In a small bowl, whisk together minced garlic, freshly grated ginger, soy sauce, and a drizzle of sesame oil to make the sauce.
  4. Slice the chicken into portions and plate it alongside the aromatic jasmine rice. Garnish with cucumber slices and fresh cilantro, and drizzle the sauce over the chicken and rice.
