  • 2 large Tomatoes Ripe and juicy
  • 200 grams Feta Cheese Crumble for best texture
  • 1 teaspoon Dried Oregano
  • 1 tablespoon Fresh Mint Chopped
  • 1/2 teaspoon Salt Adjust to taste
  • 1/4 teaspoon Black Pepper Adjust to taste
  • 1 cup Flour Use chickpea flour for gluten-free
For Frying
  • 1 cup Oil Hot oil for frying

Method
 

How to Make Greek Tomato and Feta Fritters
  1. Chop fresh, ripe tomatoes into small pieces and place in a large mixing bowl.
  2. Add crumbled feta cheese, oregano, mint, salt, pepper, and flour to the bowl with tomatoes. Mix gently.
  3. Cover the bowl and refrigerate the mixture for 30 minutes.
  4. Shape the mixture into small patties about 2-3 inches in diameter.
  5. Heat a generous amount of oil in a frying pan over medium-high heat.
  6. Carefully add the patties to the pan and fry for about 1 minute on each side until golden brown.
  7. Transfer the cooked fritters to a plate lined with kitchen paper to drain excess oil.
