How to Make Greek Tomato and Feta Fritters
- Chop fresh, ripe tomatoes into small pieces and place in a large mixing bowl.
- Add crumbled feta cheese, oregano, mint, salt, pepper, and flour to the bowl with tomatoes. Mix gently.
- Cover the bowl and refrigerate the mixture for 30 minutes.
- Shape the mixture into small patties about 2-3 inches in diameter.
- Heat a generous amount of oil in a frying pan over medium-high heat.
- Carefully add the patties to the pan and fry for about 1 minute on each side until golden brown.
- Transfer the cooked fritters to a plate lined with kitchen paper to drain excess oil.
