  • 1 medium onion brown or white
  • 1 tsp salt essential for seasoning

  • 1 cup Montasio cheese or Fontina, Gruyère, or Comté
  • 1 tbsp unsalted butter for richness
  • 1 tbsp olive oil for cooking

Preparation Steps
  1. Finely slice one onion and set it aside. Peel and grate 1.5 lbs of red potatoes.
  2. Melt 1 tablespoon each of butter and olive oil in a pan over medium heat. Add the onions and sauté until soft and translucent, about 10 minutes.
  3. Add the grated potatoes to the pan, season with salt, and cook for 15 minutes, tossing occasionally until tender.
  4. Gently mix in cubed Montasio cheese, stirring until it starts to melt, creating a creamy blend.
  5. Spread the mixture evenly in the pan and cook until the bottom is golden brown, about 6-7 minutes.
  6. Carefully slide the Frico onto a plate, then invert the pan and flip to cook the other side until golden brown, another 6 minutes.
  7. Slide the Frico onto a serving board and serve immediately.
