Preparation Steps
- Finely slice one onion and set it aside. Peel and grate 1.5 lbs of red potatoes.
- Melt 1 tablespoon each of butter and olive oil in a pan over medium heat. Add the onions and sauté until soft and translucent, about 10 minutes.
- Add the grated potatoes to the pan, season with salt, and cook for 15 minutes, tossing occasionally until tender.
- Gently mix in cubed Montasio cheese, stirring until it starts to melt, creating a creamy blend.
- Spread the mixture evenly in the pan and cook until the bottom is golden brown, about 6-7 minutes.
- Carefully slide the Frico onto a plate, then invert the pan and flip to cook the other side until golden brown, another 6 minutes.
- Slide the Frico onto a serving board and serve immediately.
