  • 1 cup black or Castelvetrano olives halve and pit before adding
  • 2 tablespoons capers optional, can omit if not available
For the Fish
  • 1 pound white fish Cod, Halibut, or Tilapia, skinless fillets
  • 1 teaspoon sea salt adjust based on the saltiness of other ingredients
  • 1 tablespoon fresh basil or flat leaf parsley optional, for garnish
  • 1/2 teaspoon red pepper flakes optional, adjust based on spice preference

Cooking Steps
  1. Preheat your oven to 400°F, ensuring the rack is in the center position.
  2. In an ovenproof skillet, melt unsalted butter over medium heat. Add minced garlic and anchovy fillets, sauté for 1-2 minutes until fragrant.
  3. Pour in dry white wine and let it cook down for about 4 minutes for flavor depth.
  4. Stir in canned whole tomatoes, dried oregano, and dried thyme; let simmer for 10 minutes until thickened.
  5. Season skinless white fish fillets with sea salt and nestle into the sauce. Transfer skillet to the oven.
  6. Bake for 8-10 minutes until fish is opaque and flakes easily.
  7. Plate the fish and spoon sauce over the top, garnishing with fresh herbs and red pepper flakes if desired.
