  • 1 cup Cottage Cheese Full-fat or low-fat
  • 1 large Egg As a binder
  • 2 tablespoons Green Onions Chopped
  • 2 tablespoons Parsley Optional, can substitute with dill
  • 1 teaspoon Garlic Powder Or fresh garlic
  • 1 teaspoon Salt To taste
  • 1/2 teaspoon Black Pepper To taste
  • 1 cup Panko Breadcrumbs Or gluten-free alternative

  • 1/2 cup Lemon-Dill Yogurt For serving

Method
 

  1. In a medium bowl, combine the drained canned tuna and cottage cheese. Gently break up the tuna with a fork.
  2. Crack an egg into the mix, followed by chopped green onions, parsley, garlic powder, salt, and black pepper. Stir until well combined.
  3. Add in the panko breadcrumbs and mix until cohesive. The mixture should hold its shape.
  4. Shape mixture into 6 equal patties, about 2½ inches wide, ensuring they are packed tightly.
  5. For pan-frying, heat olive oil in a skillet over medium heat. Cook patties for 3–4 minutes per side until golden brown.
  6. For baking, preheat oven to 400°F. Bake patties for 15–18 minutes, flipping halfway through.
  7. Serve warm with your choice of sauce, like lemon-dill yogurt or sriracha mayo, and a squeeze of fresh lemon juice.
