Method
 

Cooking Instructions
  1. Preheat the oven to 325°F (163°C).
  2. Season the pork shoulder with salt, pepper, cumin, cinnamon, and oregano.
  3. Combine achiote paste, orange juice, lime juice, and minced garlic in a bowl until smooth.
  4. Place the seasoned pork in a roasting pan and pour the marinade over it.
  5. Cover tightly with foil and bake for about 3 hours.
  6. Optionally, wrap with banana leaves for the last 30 minutes.
  7. Shred the pork using two forks and serve warm with pickled red onions and fresh tortillas.
