Preparation
  1. In a bowl, mix together the garlic, olive oil, cumin, coriander, paprika, turmeric, lemon juice, salt, and pepper. Add the chicken thighs, ensuring they're completely coated. Let them marinate for at least 30 minutes, but overnight is even better for intense flavor.
  2. Preheat your grill to medium-high to ensure a nice char and fully cooked chicken.
  3. Once the grill is hot, place the marinated chicken on it. Cook for about 16-20 minutes, turning occasionally, until it reaches an internal temperature of 165°F (75°C).
  4. While the chicken cooks, combine extra minced garlic, olive oil, and any extra seasonings for the garlic sauce in a bowl. Keep it in the fridge until ready to serve.
  5. After the chicken is cooked, slice it into strips. Serve the chicken on warm pita bread or wraps with fresh vegetables and a generous drizzle of garlic sauce.
