Marinating and Cooking
- In a large bowl, mix together the boneless chicken thighs, olive oil, spices, salt, and lemon juice. Cover and refrigerate for at least 1 hour, preferably overnight, to let those flavors develop.
- Preheat your grill or skillet over medium-high heat. Cook the marinated chicken for 16-20 minutes, or until the juices run clear and the chicken is perfectly charred, flipping halfway to achieve an even cook.
- While the chicken cooks, make the garlic sauce by combining minced garlic, olive oil, and lemon juice in a bowl. Whisk until smooth, adjusting the seasoning to your taste.
- Once cooked, let the chicken rest for a few minutes, then slice into thin strips.
- Lay out the pita bread or wraps, then add sliced chicken, fresh vegetables, and drizzle with garlic sauce. Let everyone build their own wraps!
