Method
 

Marinating and Cooking
  1. In a large bowl, mix together the boneless chicken thighs, olive oil, spices, salt, and lemon juice. Cover and refrigerate for at least 1 hour, preferably overnight, to let those flavors develop.
  2. Preheat your grill or skillet over medium-high heat. Cook the marinated chicken for 16-20 minutes, or until the juices run clear and the chicken is perfectly charred, flipping halfway to achieve an even cook.
  3. While the chicken cooks, make the garlic sauce by combining minced garlic, olive oil, and lemon juice in a bowl. Whisk until smooth, adjusting the seasoning to your taste.
  4. Once cooked, let the chicken rest for a few minutes, then slice into thin strips.
  5. Lay out the pita bread or wraps, then add sliced chicken, fresh vegetables, and drizzle with garlic sauce. Let everyone build their own wraps!
