Ingredients
  

For the Chicken Marinade
  • 1 pound Boneless, Skinless Chicken Breasts cut into 1-inch chunks
  • 2 teaspoon Kosher Salt adjust to taste
  • 1 tablespoon Grated Ginger or ginger paste
  • 3 clove Minced Garlic fresh is best
  • 2 teaspoon Garam Masala or curry powder as substitute
  • 1 teaspoon Ground Turmeric consider fresh turmeric
  • 1 teaspoon Chili Powder adjust to taste
  • 2 tablespoon Fresh Lemon Juice for brightness
For the Cooking Base
  • 2 teaspoon Clarified Butter (Ghee) or olive oil for dairy-free
  • 1 large Yellow Onion diced
  • 1 whole Hot Green Chili Pepper adjust according to tolerance
For the Main Dish
  • 4 cups Cauliflower Rice (Fresh or Frozen) fresh preferred
  • 1/4 cup Chopped Cilantro for garnish
  • 2 pieces Lemon Wedges for serving

Method
 

Directions
  1. Combine chicken chunks with kosher salt, grated ginger, minced garlic, half of the garam masala, chili powder, turmeric, and lemon juice. Marinate for at least 10 minutes.
  2. Heat ghee in a skillet over high heat. Cook half of the marinated chicken for about 5 minutes or until browned. Set aside and repeat with remaining chicken.
  3. Lower heat to medium-high, add ghee, and sauté the diced yellow onion for 3-4 minutes until golden brown.
  4. Add sliced green chili, cauliflower rice, remaining salt, garam masala, and turmeric. Cook for 6 minutes, stirring occasionally.
  5. Mix cooked chicken back into the skillet with cauliflower rice. Garnish with chopped cilantro and serve with lemon wedges.
