  • 2 cups Cherry Tomatoes Halved
  • 3 cloves Garlic Minced
  • 1 medium Shallot Chopped
  • 1 cup Mini Bocconcini (Mozzarella Balls) Halved
  • 1 cup Fresh Basil Chopped
  • 3 tablespoons Olive Oil
  • 2 tablespoons Red Wine Vinegar
  • to taste Salt + Pepper Essential for seasoning
For the Crunch
  • 1 cup Breadcrumbs Optional; use stale bread or panko

Cooking and Mixing
  1. Cook Pasta: Bring a large pot of salted water to a boil. Add your small pasta shape and cook according to package instructions until al dente, about 8-10 minutes. Drain and set aside to cool slightly.
  2. Prep Salad Ingredients: In a large mixing bowl, toss together halved cherry tomatoes, minced garlic, chopped shallot, halved bocconcini, olive oil, red wine vinegar, chopped basil, and a pinch of salt and pepper. Let this mixture sit for about 10 minutes to allow the flavors to meld.
  3. Make Breadcrumbs: If using, toast your preferred bread until crispy. Tear it into pieces and place them in a food processor, pulsing until you achieve a crumbly texture. Sauté the breadcrumbs in olive oil over medium-high heat for about 5 minutes until they turn golden brown and crunchy.
  4. Mix Salad: Add the drained pasta to the bowl with the salad mixture. Toss everything together gently until well combined. Adjust seasoning to taste.
