How to Make Baked Feta and Broccoli Pasta
- Preheat the oven to 400°F (200°C).
- Cut the broccoli florets into quarters and place them in a baking dish. Drizzle 1/2 cup of olive oil, sprinkle with salt and pepper, and toss to coat.
- Make space in the center for the feta and place it there. Drizzle more olive oil and a sprinkle of pepper on top.
- Bake for 35 minutes until the broccoli is tender and the feta is melting.
- Cook the pasta according to package instructions until al dente. Reserve 1/2 cup of the cooking water.
- Stir the broccoli and feta mixture after baking, adding the reserved pasta water to reach desired consistency.
- Add the cooked pasta to the mixture and stir until well combined.
- Finish by adding lemon juice, lemon zest, and fresh basil. Stir gently to combine.
