  • 2 tablespoons Honey Maple syrup can be used for a vegan alternative.

For the Noodles
  • 8 oz Noodles Any type works, including soba or rice noodles.
  • 2 tablespoons Vegetable Oil Can also use canola oil.
  • 1 tablespoon Fresh Ginger Use fresh for best flavor.
  • 2 cloves Garlic Can substitute with garlic powder.
  • 3 scallions Spring Onions Scallions can be used interchangeably.
  • 2 cups Baby Spinach Leaves Can substitute with kale or Swiss chard.
  • 2 tablespoons Soy Sauce for Noodles Use carefully to avoid over-salting.
  • 1 tablespoon Sesame Oil for Drizzling

Preparation and Cooking
  1. Prepare the Cod: In a shallow bowl, mix soy sauce, sesame oil, and honey. Brush this mixture onto the cod fillets and season with salt and pepper before coating with sesame seeds.
  2. Cook the Cod: Heat a non-stick pan over medium heat with a splash of vegetable oil. Cook the coated cod fillets for about 3-4 minutes on each side until golden brown.
  3. Prepare the Noodles: In a wok, warm vegetable oil over medium heat. Sauté grated ginger and minced garlic until fragrant, then add cooked noodles and toss with baby spinach.
  4. Serve: Plate the ginger noodles, top with sesame-crusted cod, drizzle with sesame oil, and sprinkle spring onions.
