How to Make Ajvar
- Preheat your oven to 425°F (218°C) for roasting peppers.
- Arrange the sweet red peppers on a baking sheet and roast for 20 minutes. Rotate and roast for another 20 minutes until charred.
- Remove skins and seeds from roasted peppers and place them in a food processor with garlic.
- Blend until roughly chopped, then add olive oil, vinegar, and kosher salt, blending to desired consistency.
- Pour the mixture into a saucepan and simmer on low for 30 minutes, stirring often.
- Cool and transfer ajvar to a glass jar; refrigerate and consume within a week.
