  • 115 g Cold Unsalted Butter Ensure it’s very cold for optimal texture.
  • 250 g Flour All-purpose flour works best.
  • 100 g Brown Sugar Granulated sugar can be a substitute.
  • 1 pinch Salt
For the Cream Cheese Layer
  • 400 g Cream Cheese Full-fat gives the best flavor.
  • 100 g Granulated Sugar No substitutes suggested.
  • 1 tsp Vanilla Extract Choose real vanilla for a robust flavor.
  • 1 large Egg Can be swapped with a flax egg for vegan option.

Method
 

Prepare the Bars
  1. Mix flour, brown sugar, salt, and very cold butter in a bowl until crumbly. Press this mixture evenly into a greased 20x30 cm baking pan to form a solid base.
  2. Cook chopped dried figs in water over medium heat until soft. Blend them with a splash of lemon juice until smooth, then spread this fig paste over the crust.
  3. In a separate bowl, blend cream cheese, granulated sugar, vanilla extract, and the egg until silky smooth. Pour this mixture over the fig layer and spread it evenly.
  4. Bake in a preheated oven at 180°C (356°F) for about 30 minutes. Look for the center to be just set with a slight jiggle when done.
  5. Allow the bars to cool completely in the pan, then chill them in the refrigerator. Once chilled, slice into bars for neat presentation.
