  • 3 medium ripe bananas Extremely ripe for sweetness
  • 1/2 cup butter Melted
  • 2 large eggs Room temperature
  • 1/2 cup nonfat Greek yogurt Can substitute with whole milk yogurt
  • 2 teaspoons vanilla extract Preferably pure
  • 2 cups all-purpose flour Can substitute half with whole wheat flour
  • 1 teaspoon baking soda Ensure it’s fresh
  • 3/4 cup sugar Can reduce for less sweetness
  • 1/2 teaspoon salt Enhances flavor
  • 1 cup Nutella Melted for swirling
Optional Toppings
  • 1/2 cup chopped nuts Walnuts or pecans
  • 1/2 cup chocolate chips For added sweetness

Preparation Steps
  1. Preheat your oven to 350°F (175°C) and prepare muffin tins.
  2. Mash the ripe bananas with melted butter. Stir in eggs, yogurt, and vanilla until smooth.
  3. In a separate bowl, whisk together flour, baking soda, salt, and sugar.
  4. Fold dry ingredients into the banana mixture until just combined.
  5. Pour the batter into prepared muffin cups, filling each two-thirds full.
  6. Melt the Nutella and drizzle over the batter, swirling gently.
  7. Bake for giant muffins for 20-25 minutes or regular muffins for 15-20 minutes.
  8. Allow to cool in the pan for 15 minutes before transferring to a wire rack.
