How to Make Cubano Chicken Roll Ups
  1. Place the thin boneless chicken cutlets into a bowl, cover with pickle juice, and marinate in the refrigerator for at least 8 hours.
  2. After marinating, drain the chicken and pat dry. Preheat your oven to 425°F (220°C).
  3. Spread a thin layer of deli mustard on each chicken cutlet, add a slice of ham, shredded Swiss cheese, and dill pickle slices along the center.
  4. Carefully roll each chicken cutlet tightly, dip in beaten egg and coat with seasoned breadcrumbs.
  5. For oven: Arrange on a greased baking sheet, spray tops with olive oil, and bake for 25 minutes.
  6. For air fryer: Preheat to 400°F (200°C) and cook in batches for about 12 minutes, flipping halfway through.
