  • 1 cup Rice Flour Any gluten-free rice flour
  • 1/2 cup Almond Flour Can substitute with ground sunflower seeds
  • 2 tablespoons Mirin Can substitute with rice vinegar and sugar mixture
  • 1/2 teaspoon Salt Sea salt recommended
For the Seasoning
  • 2 tablespoons Furikake Japanese seasoning blend; sesame seeds can substitute

Method
 

Preparation
  1. Combine rice flour, almond flour, mirin, and salt in a mixing bowl until a dough forms.
  2. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  3. Flatten the dough with a tortilla press to about 1/8 inch thick and cut into desired shapes.
  4. Sprinkle furikake and any additional seasonings on the uncooked crackers.
  5. Bake in the preheated oven for 10-15 minutes, watching closely until golden brown.
  6. Cool on a wire rack and store in an airtight container.
