Method
 

Making the Crackers
  1. Preheat your oven to 450°F and reposition the oven rack to the center.
  2. Combine the dry ingredients in a mixing bowl, including flour, baking powder, sugar, salt, cracked black pepper, fresh rosemary, and seeds. Mix until well blended.
  3. Add the olive oil and cold water to the dry mix. Stir until a dough forms; it should be pliable but not sticky.
  4. Divide the dough into four equal pieces. Roll each piece between sheets of parchment paper until thin.
  5. Prick the rolled dough all over with a fork to prevent bubbling while baking. Transfer to a baking tray.
  6. Mist the rolled dough lightly with water, then sprinkle a generous amount of flaky sea salt on top before baking.
  7. Bake for 7-9 minutes, until the crackers are golden brown and fragrant. Monitor closely.
  8. Cool the crackers on a wire rack for a few minutes. Once cooled, break them into pieces and serve.
