How to Make Rhubarb Fritters
  1. Chop rhubarb and toss with sugar, letting it sit for about 10 minutes.
  2. Whisk together flour, baking powder, salt, cinnamon, and nutmeg in a large bowl.
  3. In a separate bowl, beat the egg, then stir in milk and vanilla.
  4. Gently add wet ingredients to the dry mixture, folding in the rhubarb.
  5. Heat oil in a skillet to 350°F (175°C).
  6. Drop tablespoons of batter into the hot oil, frying until golden brown.
  7. Drain on paper towels and drizzle with glaze made from icing sugar, milk, and vanilla.
