- Preheat the oven to 200ºC / 180ºC fan / gas 6.
- Boil the potatoes in a large pan of well-salted, boiling water for 3 minutes.
- Drain well and steam dry the potatoes on kitchen paper.
- Arrange the potato slices in handfuls in the pan.
- Tuck the fresh herbs in among the potatoes.
- Melt the unsalted butter and then drizzle it generously over the potatoes.
- Season well with salt and pepper, then cook in the oven for 1 hour.
- Serve immediately to savor the best texture and flavor.
