For Braising
  • 2000 g Baby Octopus rinsed and cleaned
  • 4000 ml Water for braising
  • 1 Onion halved and unpeeled
  • 6 cloves Garlic smashed
  • 15 g Black Peppercorns
  • 2 tsp Cooking Salt (Kosher)
  • 45 ml Lemon Juice
  • 3 Parsley Stems with leaves
  • 2 Bay Leaves
For the Marinade
  • 120 ml Extra Virgin Olive Oil
  • 1 Lemon Zest from one large lemon
  • 1 tsp Dried Red Chilli Flakes optional
For Searing and Garnish
  • 15 ml Canola Oil
  • 1 tbsp Parsley freshly chopped
  • 1 tbsp Red Chilli freshly chopped
  • 1 Lemon Wedges optional

Method
 

Preparation Steps
  1. Prepare Braising Liquid: In a large pot, mix water, halved onion, smashed garlic, black peppercorns, salt, lemon juice, parsley stems, and bay leaves. Bring to a rolling boil for aromatic goodness.
  2. Braise Octopus: Gently add the octopus to the boiling liquid. Lower the heat and simmer for about 1 hour, tasting for tenderness at the 45-minute mark.
  3. Drain and Cool: Carefully take the octopus out, discarding the aromatics, and transfer it to a bowl. Allow it to cool slightly before marinating.
  4. Marinate: In a clean bowl, whisk together olive oil, minced garlic, lemon zest, lemon juice, salt, pepper, and chili flakes. Pour this mixture over the warm octopus, tossing to coat well.
  5. Sear for Crispiness: Preheat your BBQ or skillet over medium-high heat and add canola oil. Cook the marinated octopus for 3-5 minutes, until the edges are beautifully crispy.
  6. Serve: Lay the crispy octopus on a platter, garnishing generously with parsley and sliced red chili. Serve with lemon wedges for a zesty finish.
