Method
 

Preparation
  1. In a bowl, combine plain Greek yogurt, finely grated garlic, lemon juice, extra virgin olive oil, and a pinch of salt. Allow to sit for 20 minutes to meld flavors.
  2. Slice haloumi cheese into 1.5 cm (0.6 inches) thick sticks.
  3. Organize three bowls with plain flour, whisked eggs, and panko breadcrumbs.
  4. Dredge haloumi sticks in flour, dip them into whisked eggs, and press into panko breadcrumbs.
  5. Heat canola oil to 180°C (350°F) in a medium saucepan.
  6. Fry coated haloumi sticks in batches for about 1.5 minutes, until golden brown and crispy.
  7. Plate up the haloumi fries and serve immediately with the garlic dipping sauce.
