Method
 

Preparation
  1. In a bowl, combine the all-purpose flour and sea salt.
  2. Gradually pour in the seltzer water, stirring gently until smooth.

  4. Heat about 1/2 inch of vegetable oil in a heavy-bottomed skillet over medium heat.
  5. Dip each sage leaf by its stem into the batter.
  6. Add the battered leaves to the hot oil in small batches.
  7. Fry until golden brown, about 1-2 minutes per side.
  8. Transfer the leaves to a paper towel-lined plate to absorb excess oil.
  9. Lightly sprinkle with coarse sea salt and serve immediately.
