Preparation
- Start by trimming any excess fat from your rump or sirloin steak. Slice it into thin strips and marinate with light soy sauce, minced garlic, and fresh ginger for up to 2 hours.
- Mix the cornflour into the marinated beef, ensuring every piece is well-covered. Beat the eggs and coat each strip in the egg mixture.
- Heat vegetable oil in a pan to 180°C (356°F) and fry the beef strips in batches for 2-3 minutes.
- In the same pan, sauté sliced onions and carrots until softened, then add the sliced red chilli.
- Bring the crispy beef back to the pan with the sauce mixture and stir until coated.
- Serve immediately with rice or stir-fried noodles.
